Pesticide analyzes:
At the acceptance of the raw material all of our raw material is kept in quarantine till the approval of the pesticide analyze result by the quality assurance department.
Storage:
In the cold storage rooms of 1150 m2 temperatures and relative humidity of the rooms are controlled automatically. Products are kept at the temperature of <10°C and 70% relative humidity.
Shock freezing/ CO2 treatment:
In order to kill the worms and insect and to crack the eggs of them that may be inside the raw material shock freezing or CO2 treatment is applied instead of fumigation done in conventional production. Shock freezing is applied as to decrease the product temperature to a certain degrees.
Selection of Aflatoxine contaminated figs:
At the ultraviolet light of having certain wavelengths, removal of aflatoxin contaminated figs that are reflecting green color is done and these contaminated figs are send to Aegean Exporter’s Association for destruction.
Washing:
Salty water is used for the washing of figs to avoid fermentation of figs. Salt content is controlled at the beginning of each process.
Drying:
After the washing process to keep the microbial load of our products within the specifications, drying is applied to decrease the moisture content and water activity of the product.
Metal contamination:
Metal detectors are checked in every 30 min. to prove the products as metal checked.
